Raspberry Eton Mess

  • 1 punnet of raspberries
  • 2tbsp raspberry jam
  • 300ml whipping cream
  • 1tsp vanilla extract
  • 1 heaped tsp icing sugar
  • 4 meringue nests, roughly crushed


In a mixing bowl, whisk the cream with the vanilla and icing sugar until it makes soft

Fold in the raspberry jam, meringue and ¾ of the raspberries.

Divide the mixture between serving glasses and top with the remaining raspberries
and chill until you are ready to serve.
