Ingredients

  • 500g beef skirt
  • 100ml Henderson’s™ relish
  • 1tbsp salt
  • 1/2 tbsp black pepper
  • 1tsp garlic powder
  • 1tsp onion powder
  • 1tsp smoked paprika

Instructions

Method:

  1. Preheat the oven to 80°c/70°c Fan/176°F/Gas Mark 1.
  2. Freeze the piece of skirt for 1 hour which will help to cut the pieces evenly.
  3. Slice the beef across the grain into 3/4mm slices.
  4. Place the Hendersons relish, salt, pepper, garlic powder, onion powder and smoked paprika in a bowl and mix well.
  5. Add the slices of beef and marinate in the fridge for 4 hours
  6. Remove the slices from the marinade and place on a wire rack with a baking tray underneath.
  7. Bake in the oven for 3-4 hours until dry, turning every hour.
  8. Remove from the oven and allow to cool naturally.
  9. Place in an airtight bag and store in the freezer.

Chef’s Tip:

Add different spices for different flavour profiles. Try Chinese five spice and chilli for an oriental style or chilli and BBQ spices for a Texan flavour.
