Cherry and Amaretto Tiramisu
Ingredients
- 100g Morello cherries
- 50ml Morello cherry syrup, taken from the cherry jar
- 1tbsp honey
- 2tbsp amaretto liquor
- 100ml whipping cream
- 1tbsp icing sugar
- 1tsp vanilla extract
- 100g mascarpone
- 16 amaretti biscuits, lightly crushed
- A dusting of cocoa powder
Instructions
Method:
- Place the Morello cherries, Morello cherry syrup and honey into a small saucepan. Bring to the boil and boil for 5 minutes to reduce.
- Spoon the cherries and syrup into a bowl, add the amaretto liquor and allow to cool.
- Place the cream, icing sugar and vanilla extract in a bow and lightly whip the cream until it forms soft peaks.
- Mix the mascarpone to soften, then lightly fold the mascarpone into the whipped cream and set to one side.
- To build the tiramisu, use 2 small serving glasses and place half of the crushed amaretti biscuits into base of each glass. Spoon half of the cooled cherry mix over the biscuits and top with half of the mascarpone cream mix.
- Repeat step 5.
- Dust the tops lightly with a little cocoa powder and enjoy!
Chef’s Tip:
Place the mascarpone cream into a piping bag and pipe rosettes of cream for a professional finish. This recipe is better made ahead of time to allow the amaretti biscuits to soak up all the cherry juices, perfect to prep the day before for no stress entertaining!
