Sweet Potato, Oat and Dark Chocolate Snack Bars
Ingredients
- 150g sweet potato, grated
- 1 egg, beaten
- 80g dark chocolate chips
- 50g peanut butter
- 1tbsp maple syrup
- 200g organic rolled oats
- 1tsp baking powder
- 1tbsp mixed seeds
- 1/2 tsp Maldon smoked salt flakes
Instructions
Method:
- Preheat the oven to 200°c/180°c Fan/392°F/Gas Mark 5.
- Simmer the grated sweet potato in boiling water for 3 minutes, drain and set aside until fully dry.
- Add the sweet potato to a mixing bowl with the beaten egg, chocolate chips, peanut butter, maple syrup and mix well.
- Blitz 50g of the oats in a small food processor to a floury consistency, add to the mix with 1 tsp baking powder and the rest of the oats.
- Mix well then pour into a parchment lined small 15cm square tin and sprinkle with the seeds and the smoked salt.
- Bake in the oven for 20 minutes until golden, allow to cool, then transfer to set overnight in a fridge.
- Cut into small squares or fingers and serve.
Chef’s Tip:
To keep for longer, wrap each individual square or finger and store in the freezer. Defrost for 20 minutes then serve.
