Ingredients

  • Buttermilk Dressing
  • 175ml buttermilk
  • 1/2 tsp Dijon mustard
  • 1/2 tbsp lemon juice
  • 1 garlic clove, crushed
  • 1 tsp chives, chopped
  • Salt and Pepper
  • Wasabi Dressing
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 lime, juice only
  • 1 shallot, chopped
  • 1 tsp wasabi paste
  • 1 garlic clove, chopped
  • 1 tsp sesame seeds
  • 1 tsp Nigella seeds
  • Passionfruit Dressing
  • 3 passionfruit
  • 3 tbsp olive oil
  • 1 tsp honey
  • 1 tbsp corinader
  • Salt and pepper

Instructions

Buttermilk Dressing

  1. Place all of the ingredients into a bowl and whisk to combine.
  2. Season to taste with salt and pepper. This dressing works well with chicken,
    why not add to a Caesar salad for a change?

Wasabi Dressing

  1. Place all of the ingredients into a bowl and whisk to combine. Serve with an Asian style salad.

Passionfruit Dressing

  1. Cut each passionfruit in half, scoop the seeds and juice into the bowl of a food processor.
  2. Add the remaining ingredients and blitz to emulsify.
  3. Season to taste with salt and pepper. This dressing is perfect for seafood, try drizzled
    over prawns or crayfish.

CHEF’S TIP

Why not serve a salad bar as part of your BBQ? Serve different salad ingredients in bowls and place the dressings in clean jars. Guests can build up their own salad plates and choose a dressing to match.
