Yorkshire forced rhubarb

Slender and bright pink, this elegant British speciality is ‘forced’ in the famously dark growing sheds of Yorkshire’s rhubarb triangle. The process safeguards the rhubarb’s striking colour and bright flavour, which works beautifully with orange in trifles (try our luxurious recipe), crumble and breakfast compote. Our grower, Johnathan Westwood, has rhubarb in his blood: his family have been growing it since the 1800s.
