Bourbon and Maple Glazed Carrots
Ingredients
- 200g punnet baby carrots
- 25g butter
- 25ml bourbon
- 1tbsp maple syrup
- Salt and pepper, to taste
- Sprigs of fresh thyme
- Pinch smoked paprika

Method
- Cut the carrots in half lengthways and fry in butter in a heavy bottomed frying pan until they start to colour.
- Add the bourbon and maple syrup and continue to cook until they are sticky.
- Season to taste with salt and pepper and arrange onto a small plate.
- Garnish with sprigs of thyme and a dusting of smoked paprika.
