Bourbon and Maple Glazed Carrots

Ingredients

  • 200g punnet baby carrots
  • 25g butter
  • 25ml bourbon
  • 1tbsp maple syrup
  • Salt and pepper, to taste
  • Sprigs of fresh thyme
  • Pinch smoked paprika

Instructions

Method

  1. Cut the carrots in half lengthways and fry in butter in a heavy bottomed frying pan until they start to colour.
  2. Add the bourbon and maple syrup and continue to cook until they are sticky.
  3. Season to taste with salt and pepper and arrange onto a small plate.
  4. Garnish with sprigs of thyme and a dusting of smoked paprika.
