French Onion With Blue Cheese Pork Loins

Ingredients

  • 1tbsp butter
  • 3tbsp olive oil
  • 2 large white onions, finely sliced
  • 1tsp salt
  • 1tsp black pepper
  • 4 boneless pork loins
  • 1tbsp flour
  • 200ml beef stock
  • Splash of red wine
  • 1/2tsp Worcestershire sauce
  • 1tsp Dijon mustard
  • 200g blue cheese, crumbled
  • 1tsp fresh thyme, to garnish

Instructions

Method

  1. Add butter and 1tbsp of olive oil to a pan over medium heat. Once hot, add in the sliced onions. Cook the onions, stirring frequently, until soft and golden for about 10 minutes.
  2. Season the onions with salt and pepper. Lower the heat to medium-low and continue cooking your onions for about 10 minutes, or until deep golden and sticky. Remove the onions from the pan and set aside.
  3. Season all sides of the pork loins with salt and pepper. Turn the heat to high and add 1tbsp of olive oil to the pan. Once the oil is hot, place the pork chops in the pan and sauté on each side until golden brown, for about 5-10 minutes. Remove from the pan and set aside.
  4. Lower the heat back to medium and add the remaining 1 tbsp of olive oil. Add the sauteed onions back to the pan, and sprinkle with flour. Toss until the flour is not visible.
  5. Pour in beef stock and red wine, stirring frequently until no lumps are remaining.
  6. Stir in the Worcestershire sauce, any resting juices from the pork and mustard, then add the pork chops.
  7. Spoon over some of the onions, top with blue cheese, and cook on high for 3-5 minutes until the cheese has melted.
  8. Garnish with fresh thyme, then serve.

Chef’s Tip 

Use a meat thermometer so you don’t overcook the pork.
