  • 250-300g leftover bread (brioche, white, panettone or mixed scraps)
  • 300ml milk (or half milk/half leftover cream)
  • 2 eggs
  • 60g sugar
  • Zest of 1 orange
  • 1tsp ground cinnamon
  • Large handful of dried berries or chopped leftover dried fruit
  • Butter for dotting (optional)

Method

  1. Prep the leftovers: Tear the bread into chunks and place in a greased baking dish. Using different types of bread creates great texture—perfect for reducing waste.
  2. Scatter dried berries over the bread. A great way to use up the last bits from mixed fruit bags.
  3. Whisk together the milk, eggs, sugar, orange zest and cinnamon. Pour over the bread and press down lightly so it soaks in.
  4. Rest for 10 minutes (or cover and chill overnight).
  5. Bake at 180°C (fan 160°C) for 30–35 minutes, until golden and just set.
  6. Serve warm, dusted with icing sugar or topped with any leftover cream whipped up.
