Jersey Royal potatoes

The fresh earthiness of a good Jersey Royal is the first true taste of spring. Ours are grown in the time-honoured way by family farmers who still use seaweed to fertilise the island’s rich earth. The potatoes come north to us as quickly as possible to preserve their flavour, and they just need the briefest of cooking and a bit of butter. If the weather outside the kitchen window isn’t as balmy as on Jersey, try them in this rich tartiflette.
