Ingredients

  • Indian Burger
  • 1 Small white onion, finely diced
  • 1tsp Cumin seeds
  • 1tsp Dried corriander
  • 1/2 tsp Tumeric
  • 1/2 tsp Ground ginger
  • 1 tsp Garlic powder
  • 1-2 Birdseye chillies, finely chopped
  • 400g Lean beef mince
  • 2tsp Mango pickle
  • Caramelised Red Onion and Cheddar Burger
  • 1 Red onion, finely diced
  • 1tsp Balsamic vinegar
  • 400g Lean beef mince
  • 150g Cheddar, grated
  • Salt and perpper to taste
  • Nacho Burger
  • 1 Small red onion, finely diced
  • 2tsp Smoked paprika
  • 6-8 Jalapeno peppers, diced
  • 1tsp Garlic powder
  • 1tsp Chipotle chilli flakes
  • 1tsp Ground coriander
  • 1/2 tsp Ground cumin
  • 400g Lean beef mince
  • Fresh coriander, finely chopped

Instructions

Indian Burger

Method:

  1. In a pan heat a drizzle of oil and fry the diced onion until softened. Then, set aside and allow to cool.
  2. Add all of the spices and chilli to the pan and fry for another minute or so to release all the flavours.
  3. In a bowl, break up the mince and add the cooked onion mixture, spices and mango pickle. Using your hands, mix well until combined.
  4. Divide into 4 equal portions and roll into balls. Using the palm of your hand, flatten down to make a burger patty.
  5. Heat a little oil in a pan and cook the burgers for 3-4 minutes either side.
  6. Serve on a naan with Raita, mango chutney and coriander.

Chefs Tip:

Lime pickle or mixed pickle will work just as well for this.

Caramelised Red Onion and Cheddar Burger

Method

  1. In a pan, heat a drizzle of oil and fry the onion until softened.
  2. Add a tbsp of balsamic vinegar and cook for a further couple of minutes until onions have caramelised.
  3. In a bowl, break up the mince and add the cooked onion mixture, cheddar and salt and pepper to taste. Using your hands, mix well until all combined.
  4. Divide into 4 equal portions and roll into balls. Using the palm of your hand, flatten down to make a burger patty.
  5. Heat a little oil in a pan and cook the burgers for about 3-4 minutes either side.
  6. Serve on burger buns with lettuce and tomatoes.

Chefs Tip:

You can use any cheese you like, a smoky cheese also works very well.

Nacho Burger

Method

  1. In a pan, heat a drizzle of oil and fry the onion until softened. Then set aside and allow to cool.
  2. Add the paprika, jalapeños, garlic powder, chipotle chilli flakes, ground coriander and cumin to the pan and cook for a minute or so to release the flavours.
  3. In a bowl, break up the mince and add the cooked onion mixture, spices and fresh coriander. Using your hands mix well until all combined.
  4. Divide into 4 equal portions and roll into balls. Using the palm of your hand flatten down to make a burger patty.
  5. Heat a little oil in a pan and cook the burgers for about 3-4 minutes either side.
  6. Serve on burger buns with lettuce, sour cream, guacamole, salsa and tortilla chips.

Chefs Tip:

You can also add a handful of sweetcorn and black beans if you desire for added Mexican flavour.
