Pastrami, Gherkin and Cheese Sandwich

Ingredients

  • 1/2 red onion, sliced
  • 1 radish, sliced
  • Vinegar
  • Butter
  • 4 slices of your preferred bread
  • 2tsp English mustard
  • Handful of fresh rocket
  • 200g pastrami, sliced
  • 100g cheese of choice
  • 20g crispy fried onions
  • 2 large gherkins, sliced
  • 50g crisps of your choice

Instructions

Method:

  1. Put the red onion and radish slices in a bowl with some vinegar and leave to soften and pickle for 30 minutes.
  2. Butter the slices of bread and spread mustard on all slices.
  3. Divide the rocket between each slice.
  4. Divide the pastrami between the two slices and place on top of the rocket.
  5. Add a spoonful of red onion and radish on top of the pastrami.
  6. Follow with the cheese and melt under a grill for 3-4 minutes until cheese is melted.
  7. Layer with crispy onions, slices of gherkin and a layer of crisps.
  8. Place the 2 leftover slices on top and enjoy.

Chef’s Tip:

Can substitute mustard for siracha or hot sauce for a spicy kick.
