Roasted Beetroot – Easy as 1,2,3
- 5-6 beetroots
- 1 pack rock salt
It’s as easy as 1,2,3 to make your own freshly roasted beetroot. By roasting the beets on a bed of salt it gives the end result a lovely intense sweet flavour.
- Take 5-6 beetroots and trim off the leaf stems.
- Place 150g of rock salt onto a baking tray then pop the beets on top. Roast in the oven for 40-45 minutes at 180°C / 350°C / gas mark 4 or until soft.
- Once cooked, remove from the oven, leave until cool enough to handle, then simply rub the skin from the beets, (wear gloves for this to avoid staining your hands) slice and serve.
