Ingredients

  • For The Base:
  • 180g digestive biscuits
  • 90g butter, melted
  • For The Filling:
  • 500g full fat cream cheese
  • 1tsp vanilla extract
  • 250g double cream
  • 50g icing sugar
  • 250g strawberries, chopped
  • To Garnish:
  • 250g strawberries cut into quarters
  • 50ml white rum
  • 1 lime, juice only
  • 50ml strawberry liquor

Method

  1. Crumble the digestive biscuits in a food processor and add the melted butter.
  2. Press the crumb mix evenly into the bottom of a parchment lined, spring base cake tin
  3. In a bowl mixer whisk together the cream cheese, vanilla, double cream and icing sugar until thick and creamy.Fold in the chopped strawberries and top over the cheesecake crumb base.Smooth the top with a pallet knife and chill for two hours.
  4. Cut the remaining strawberries into quarters and place into bowl.
  5. Put 8 pieces into a cocktail shaker and press with a cocktail spoon to muddle.
  6. Add the white rum, lime juice and strawberry liquor with a handful of ice and shake for 30 seconds.
  7. Pour over the bowl of quartered strawberries, mix well and place on top of the cheesecake.

Chef‘s Tip:
For a frozen strawberry daiquiri sauce, freeze the strawberries first, blend with the rum, lime and strawberry liquor and serve with the cheesecake.
