Baked Apples and Pears

  • 2 sweet eating apples
  • 2 ripe pears
  • 16 blackberries
  • 1 packet blueberries
  • 1tbsp honey
  • 100ml apple juice
  • 1 vanilla pod
  • 100g Booths everyday plain flour
  • 50g butter, chilled and cubed
  • 50g demerara sugar


Slice the apples and pears in half and scoop out the cores. Place into an ovenproof dish.

In a saucepan warm the honey, apple juice and vanilla. Pour over the apples and bake for 5 minutes, then remove from the oven.

Place 3 blackberries onto each apple and pear, then divide the blueberries over.

In a bowl add the flour and chilled butter, with your fingers rub the butter into the flour until you have a breadcrumb consistency. Stir in the demerara sugar and scatter over the apples and pears trying to keep the berries under the crumb.

Bake for 20 minutes until golden. Allow to cool slightly and serve with the juices in the tray. Why not try with ice cream, cream or custard.
