Ingredients

  • 150g grated carrot
  • 150g grated parsnip
  • 2 cloves of garlic, diced
  • 80g of gram flour
  • Handful of chopped coriander
  • 1 small chilli diced
  • 1 tsp salt
  • 1 tsp curry powder
  • 1 tsp cumin
  • 2 free range eggs

Instructions

METHOD:

  1. Preheat the oven to 180°c / 160°c fan, 350°f or gas mark 4.
  2. Line a baking sheet with parchment.
  3. Mix all the ingredients together to form a batter.
  4. Take heaped teaspoons and drop onto the baking sheet, then bake for 10-15 minutes. until golden.
  5. Serve with raita or chutney.

CHEFS TIP

Try making the bhajis with courgette and sweet potato, they work just as well!
