Carrot & Parsnip Bhajis
Ingredients
- 150g grated carrot
- 150g grated parsnip
- 2 cloves of garlic, diced
- 80g of gram flour
- Handful of chopped coriander
- 1 small chilli diced
- 1 tsp salt
- 1 tsp curry powder
- 1 tsp cumin
- 2 free range eggs
Instructions
METHOD:
- Preheat the oven to 180°c / 160°c fan, 350°f or gas mark 4.
- Line a baking sheet with parchment.
- Mix all the ingredients together to form a batter.
- Take heaped teaspoons and drop onto the baking sheet, then bake for 10-15 minutes. until golden.
- Serve with raita or chutney.
CHEFS TIP
Try making the bhajis with courgette and sweet potato, they work just as well!
