Deep Fried Cheese and Pineapple On A Stick

Ingredients

  • 120g fresh pineapple
  • 12 mini mozzarella balls
  • 75ml water
  • 50g plain flour
  • 1tsp smoked paprika
  • 25g parmesan, grated
  • 50g Panko breadcrumbs
  • Salt and pepper, to taste
  • 6 bamboo skewers

Instructions

Method

  1. Cut the pineapple into 12 even-sized chunks.
  2. Thread a piece of pineapple, then a mozzarella ball, then pineapple and finally a mozzarella ball onto a skewer. Repeat the process until you have 6 skewers.
  3. In a bowl mix the water and flour to a batter consistency.
  4. In a separate bowl, mix the paprika, parmesan and breadcrumbs together.
  5. Coat each skewer in the batter and then in the breadcrumb mix.
  6. Cook at 200°c for 8 minutes in an air fryer or deep fry at 180°c for 4-5 minutes

Chef’s Tip

To make a quick and easy relish to accompany these skewers, finely chop 1 pickled onion and mix with a bunch of chopped chives and 100ml of sour cream.
