Ingredients

  • 1 cut of steak of your choice

Instructions

Method:
1. Remove the steak from the fridge 30 minutes prior to cooking.
2. Preheat your dry frying pan until it’s hot.
3. Don’t season the steak before cooking as the salt and pepper can burn in the pan.
4. Lightly rub the steak on both sides with olive oil and add a little oil to the pan.
5. Place the steak in the pan and leave to cook on one side, don’t keep turning it over.
6. Allow to cook according to the cooking guidelines and your personal preference, see our guide below.
7. Turn over the steak as it will now be nearly cooked half way through .
8. As you turn the steak over using tongs, render down any fat on the side of the steak.
9. Allow to cook half way through to your liking on the second side.
10. The side that is facing up can now be seasoned with salt and pepper whilst it’s still in the pan.
11. During the cooking of the second side add a good chunk of butter to the pan along with some fresh thyme and 3 crushed garlic cloves and baste repeatedly over the steak
12. Remove the steak from the pan and place on a wooden board, season the second side well with salt and pepper and cover loosely with tin foil for 5-10 minutes, remember the steak will continue to cook whilst resting.
