Ingredients

  • A drizzle of olive oil
  • 2 chicken breasts
  • 2 shallots, sliced
  • 2 garlic cloves, sliced
  • 25ml white wine
  • 1tsp plain flour
  • 250ml chicken stock
  • 250ml double cream
  • 75g sundried tomatoes, halved
  • 25g parmesan, grated
  • 1/2 lemon, juice only
  • Basil leaves
  • A pinch of paprika

Instructions

Method

  1. Heat a drizzle of olive oil in a non-stick pan.
  2. Add the chicken, shallots and garlic, and sauté for 5 minutes turning the chicken halfway to brown on both sides.
  3. Remove the chicken from the pan. Add the white wine and cook for 1 minute to reduce, then add the flour and stir.
  4. Add the stock, cream and sundried tomatoes to the pan, bring to a simmer and return the chicken to the pan.
  5. Simmer for 20 minutes turning the chicken halfway through.
  6. Add the parmesan, lemon juice, and season to taste.
  7. Remove the pan from the heat and garnish with basil leaves and a pinch of paprika. Serve with gnocchi and tenderstem ® broccoli.

Chefs Tip

If the chicken breasts are large, ensure the chicken is cooked through and add extra cooking time if required. This dish works well with so many serving suggestions, we are serving with gnocchi but also try orzo, tagliatelle, rice and creamy mash.
