Ingredients

  • 3tbsp olive oil
  • 2tbsp fresh lemon juice
  • 1tbsp red wine vinegar
  • 3 garlic cloves, minced
  • 1tbsp dried oregano
  • 1tsp dried thyme
  • 1tsp salt
  • 1/2stp black pepper
  • 450g pork tenderloin or pork shoulder, cut into 1-inch cubes
  • 4 pitta breads, to serve
  • Lemon wedges, to serve
  • Tzatziki sauce, to serve
  • 1 red onion, sliced, to garnish
  • Tomato slices, to garnish
  • Cucumber slices, to garnish

Instructions

Method

  1. In a large bowl, blend the olive oil, lemon juice, red wine vinegar, garlic, oregano, thyme, salt, and pepper to make the marinade.
  2. Toss the pork cubes in the marinade until they are properly coated. Cover the bowl with cling film and place in the refrigerator for at least 1 hour, preferably overnight.
  3. Prepare a grill or grill pan by bringing it up to a medium-high heat.
  4. Put the marinated pork cubes onto skewers, leave a little space between each piece for even cooking.
  5. Cook the skewers on the preheated grill for about 10-12 minutes, turning occasionally, until the pork is cooked through and lightly charred on all sides. Then take the skewers off the grill.
  6. Place the pitta breads on the grill for 1-2 minutes on each side, until warm, soft, and just slightly charred.
  7. Serve the pork with warm pita bread and lemon wedges and garnish with tzatziki, red onion, tomatoes, and cucumber.

Chef’s Tip 

If using wooden skewers soak in cold water for at least 30 minutes before using to stop them burning.
