Pumpkin Porridge with Blackberry Compote

Ingredients
- 125g blackberries
- 1/2 lemon, juice only
- 25g caster sugar
- 100g pumpkin flesh
- 100g rolled oats
- 400ml milk
- 2tbsp honey
- Pinch of salt
Instructions
Method:
- To make the blackberry compôte, place the blackberries, lemon juice and sugar into a small saucepan and bring to a simmer. Continue to cook for 5 minutes and then allow to cool.
- Dice the pumpkin into small equal sized pieces and place into a saucepan with the oats and milk and bring to a simmer. Continue to stir for 5 minutes until thick and creamy.
- Add the honey and a pinch of salt, add a little more milk if it’s too thick.
- Check the pumpkin is tender and pour into a bowl. Top with a spoonful of blackberry compote and serve warm.
Chefs Tip:
To make this dish savoury, remove the honey and add plenty of grated Parmesan. It’ll still work with the blackberry compôte.
