Ingredients

  • 1 pumpkin, seeds only
  • 2 tbsp olive oil
  • 1 tsp sea salt flakes
  • 1/2 tsp chilli flakes
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Other flavours to try
  • Cracked Black Pepper & Pink Sea Salt
  • 1 tbsp olive oil

  • Honey, Vanilla & Brown Sugar
  • 1 tbsp honey (no olive oil)
  • 1 tbsp brown sugar
  • 1/4 tsp vanilla
  • Pinch of salt
  • Pizza
  • 1 tsp olive oil
  • 1 tbsp grated Parmesan
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp sea salt
  • 1/8 tsp garlic powder
  • Cinnamon Sugar
  • 1 tsp olive oil
  • 1 tbsp soft brown sugar
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

METHOD

  1. Scrape the seeds from your pumpkin, then rinse them well. Boil the seeds for 10 minutes, then drain and pat dry — this takes away any chewiness from the seeds.
  2. Preheat the oven to 200°c. In a bowl, mix together all of the ingredients until the pumpkin seeds are evenly coated.
  3. Place the seeds onto a non-stick baking sheet in one layer and bake for 30-40 minutes, turning every 10 minutes or so.
  4. Leave to cool and then enjoy!

Chef’s tip:  This is a great way to use up the leftover pumpkin seeds from your Halloween pumpkin.
