Roasted Pumpkin Seeds
Ingredients
- 1 pumpkin, seeds only
- 2 tbsp olive oil
- 1 tsp sea salt flakes
- 1/2 tsp chilli flakes
- 1 tsp garlic powder
- 1 tsp paprika
- Other flavours to try
- Cracked Black Pepper & Pink Sea Salt
- 1 tbsp olive oil
- 1 tsp cracked black pepper
- 1 tsp pink sea salt
- Honey, Vanilla & Brown Sugar
- 1 tbsp honey (no olive oil)
- 1 tbsp brown sugar
- 1/4 tsp vanilla
- Pinch of salt
- Pizza
- 1 tsp olive oil
- 1 tbsp grated Parmesan
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp sea salt
- 1/8 tsp garlic powder
- Cinnamon Sugar
- 1 tsp olive oil
- 1 tbsp soft brown sugar
- 1/2 tsp cinnamon
- Pinch of salt

METHOD
- Scrape the seeds from your pumpkin, then rinse them well. Boil the seeds for 10 minutes, then drain and pat dry — this takes away any chewiness from the seeds.
- Preheat the oven to 200°c. In a bowl, mix together all of the ingredients until the pumpkin seeds are evenly coated.
- Place the seeds onto a non-stick baking sheet in one layer and bake for 30-40 minutes, turning every 10 minutes or so.
- Leave to cool and then enjoy!
Chef’s tip: This is a great way to use up the leftover pumpkin seeds from your Halloween pumpkin.
