  • 250g butter, softened
  • 250g caster sugar
  • 250g custard (reserve 100g for later)
  • 4 large eggs
  • 300g self-raising flour
  • 1/2 tsp baking powder
  • 50g ground almonds
  • 100g salted caramel
  • 1 tsp vanilla extract
  • 2 apples, sliced
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp ground ginger
  • 25g flaked almonds


1. Preheat the oven to 180°C/160°Fan/350°F/Gas Mark 4.
2. Whisk the butter, sugar and 150g of custard together.
3. Add in the eggs and whisk until light and fluffy.
4. Fold in the flour, baking powder, ground almonds and caramel.
5. Add the vanilla extract, cinnamon, cloves and ground ginger then pour the mixture into a lined 25x16x2cm baking tray.
6. Place the apple slices and small spoonfuls of the reserved custard on top.
7. Sprinkle with the flaked almonds and bake for 35-40 minutes
8. Serve warm with custard or cold with ice cream.

Chefs Tip:
Soak the slices of apple in a little lemon juice to prevent it turning brown before adding to the mixture. The lemon juice won’t affect the bake.
