Stuffed Pizza Dough Balls On A Stick

Ingredients

  • For The Pizza Dough:
  • 500g pizza flour
  • 1tsp salt
  • 350ml water
  • 75ml extra virgin olive oil
  • 3.5g sachet activated yeast
  • For The Pizza Stuffed Dough Balls:
  • 100g pizza sauce or crushed tin tomatoes
  • 12 basil leaves
  • 12 mini mozzarella balls
  • 20g parmesan, grated
  • 1tsp oregano
  • Salt and pepper to taste
  • 6 bamboo skewers

Instructions

Method

  1. Preheat the oven to 200c/180°c Fan/392F/Gas Mark 5.
  2. To make the pizza dough mix the flour, salt, water, 50ml of olive oil and dried yeast and knead for 10 minutes to form a smooth dough.
  3. Place the dough into a clean bowl that has been brushed with a little more oil, cover with a clean damp cloth and place in a warm area of the kitchen to prove for 1 hour.
  4. Once the dough has doubled in size, tip out onto a lightly oiled surface, and knead again for 30 seconds and then cut and shape into 12 small balls, cover with some loose cling film and prove for another hour.
  5. Carefully roll out each ball and add a teaspoon of pizza sauce in the middle, 1 basil leaf and a small ball of mozzarella.
  6. Bring the dough together until you encase the filling and have formed a stuffed dough ball.
  7. Place on an oiled tray and bake in the oven for 4 minutes.
  8. Thread 2 onto a skewer, drizzle with olive oil and sprinkle with parmesan and oregano.
  9. Continue to bake for a further 2 minutes and serve with a pesto dip.

Chef’s Tip

To stop the skewers burning soak in water for 10 minutes before you use them.
