Toffee Apple Sparklers

Toffee apple edible sparkler

Ingredients

  • 2 apples
  • 200g caster sugar
  • 1tsp vanilla essence
  • 4 bread sticks
  • 4 marshmallows
  • Sprinkles
  • Sprinkle of ground cinnamon

Instructions

Method:

  1. Peel and core the apples and use a cookie cutter to cut 16 star shapes or slice into 3mm thick wedges.
  2. Poach the wedges in boiling water for 5 minutes until they soften a little and allow to cool for 30 minutes.
  3. To make the caramel, warm the sugar and vanilla essence in a pan until it starts to melt. Swirl the pan until the sugar has dissolved and become amber in colour. Do not stir the caramel as this can crystallise the sugar.
  4. Carefully pat dry the apple slices and poke a hole through each piece with a skewer big enough to thread onto the bread sticks.
  5. Carefully thread 4 apple slices onto each breadstick and spoon the caramel over the apple. Take care when working with hot caramel.Then allow to set.
  6. Add sprinkles and top each one with a marshmallow. Toast the marshmallow and serve.

Chef’s Tip:

Try a savoury sparkler with diced pumpkin and smoked cheddar, served with pumpkin seed pesto.
