Toffee Apple Sparklers

Ingredients
- 2 apples
- 200g caster sugar
- 1tsp vanilla essence
- 4 bread sticks
- 4 marshmallows
- Sprinkles
- Sprinkle of ground cinnamon
Instructions
Method:
- Peel and core the apples and use a cookie cutter to cut 16 star shapes or slice into 3mm thick wedges.
- Poach the wedges in boiling water for 5 minutes until they soften a little and allow to cool for 30 minutes.
- To make the caramel, warm the sugar and vanilla essence in a pan until it starts to melt. Swirl the pan until the sugar has dissolved and become amber in colour. Do not stir the caramel as this can crystallise the sugar.
- Carefully pat dry the apple slices and poke a hole through each piece with a skewer big enough to thread onto the bread sticks.
- Carefully thread 4 apple slices onto each breadstick and spoon the caramel over the apple. Take care when working with hot caramel.Then allow to set.
- Add sprinkles and top each one with a marshmallow. Toast the marshmallow and serve.
Chef’s Tip:
Try a savoury sparkler with diced pumpkin and smoked cheddar, served with pumpkin seed pesto.
