Stephanie Shaw’s Vegan Pancakes

Our London 2 Paris rider Stephanie Shaw has shared her recipe for vegan pancakes which is a personal favourite for fueling her training!

Vegan Pancakes

Ingredients

  • 200g instant oats
  • 2 bananas
  • 300ml almond milk
  • Pinch of cinnamon
  • Favourite toppings
  •  

    Method

  • Blend the ingredients together in a food processor until smooth
  • Spray Fry light oil in a medium-low heated frying pan
  • Pour palm-sized servings of the batter into the pan
  • Flip when bubbles start to show
  • Place onto a plate once cooked and add your favourite toppings

    My favourite is peanut butter, fresh fruit, a drizzle of agave nectar & a sprinkle of sliced almonds!
