Crafted for us by artisan cheesemakers in the historic village of Cheddar, this cheese is truly something special.
The Cheddar Gorge Cheese Company first began in 2003, making their authentic cheddar in the heart of Somerset. In 2006, they decided to experiment by making use of the gorgeous natural landscape and maturing their cheeses in the caves at Cheddar Gorge. The result was a unique flavour and texture; strong, intense and moist from the consistent temperature and high humidity within the caves.
Still using traditional Cheddar making processes, first mastered centuries ago, our Booths Cave Aged Mature Cheddar starts out as locally produced, unpasteurised milk which is turned into curds and cheddared by hand before being carefully wrapped in cotton cloth and placed in the caves to mature. This established process, much of which is carried out by hand, allows the cheesemakers to keep a close eye on the development of the cheese, contributing to the final taste and texture.
Rounded and complex, it’s perfect for enjoying on a cheese platter with handmade chutney and sourdough crackers or use it as part of our crispy onion crumpet loaf with hot cheese custard recipe.
